1 Peel and clean the shrimp. Grate the zest of one lemon and squeeze its juice. Set aside.

2 Heat olive oil in a pan. Add the shrimp and cook until they are pink and slightly golden. Season with salt and pepper.

3 Meanwhile, cook the capellini in salted boiling water according to package instructions. Drain.

4 Add the lemon juice to the pan with the shrimp and mix well. Gently toss in the capellini.

5 Serve the capellini on plates, topped with stracciatella, chopped fresh parsley, and grated lemon zest. Serve immediately.
