Capellini 500 g Shrimp 400 g Lemons 2 Parsley fresh Stracciatella 150 g Extra virgin olive oil Salt and pepper |

1 Peel the shrimp and clean them well. Zest two lemons, then squeeze out the juice and pulp. Set aside.

2 Heat a little olive oil in a pan. Add the shrimp and cook until they turn pink and lightly golden. Season with salt and pepper.

3 Meanwhile, cook the capellini in boiling salted water according to the package instructions. Drain, reserving one ladle of the cooking water.

4 Add the lemon juice and pulp to the pan with the shrimp and mix well. Add the capellini, pour in the reserved pasta water, drizzle with olive oil, and gently toss everything together.

5 Serve the capellini on plates, top with stracciatella, finely chopped fresh parsley, and grated lemon zest. Add black pepper and a final drizzle of olive oil. Serve immediately.
